This is a very simple recipe I found from baby & toddler by Jody Vassallo. It is categorised under toddler’s lunches and snacks.
Ingredients:
2 small flour tortillas (20cm)
30g shaved ham (I used 1 sliced ham because it’s easier to lay on the tortilla)
2 Tbsp grated cheddar cheese (I love to eat melted cheese so I used more)
1 small tomato, sliced
Olive oil spray

Method:
- Lay 1 tortilla on a flat surface. Tope with the ham, cheese, tomato and the remaining tortilla.
- Lightly spray a non-stick fry pan with olive oil spray, add the tortilla stack and weigh it down with a plate. Cook over medium heat for 2 minutes or until bottom tortilla is crisp and golden.
- Slide the tortilla out of the pan and onto a plate. Return to the pan and cook the other side until it is crisp and golden and the cheese has melted. Cut into wedges to serve.



I know it’s a toddler’s recipe but I ate most of it. Ethan just had a few bites because he didn’t like it, just as he don’t like any other food I cook. I’m struggling everyday when it comes to dinner time.

may be you can cut this for his bite size. smaller portion for him to eat easily, just pop inside his mouth one at a time.
I did, he only ate a few pieces. *sigh*
